Brandy Laced Beef and Mushroom Stroganoff

Beef stroganoff with creamy mushroom gravy is one of my favorite meals on these chilly days. The tender beef and creamy gravy is a filling and tasteful meal you'll crave all winter long. This recipe is so easy and amazingly tasty that you'll want to make it again and again.

To start choose which cut of beef to use. Round steak or chuck are my first choice of cuts for this recipe because they both become tender when slow cooked and are best when served along with gravy. I have used sirloin before and it is probably one of the top picks for most people. I have a freezer full of meat, with all the various cuts. so I try to use my round or chuck up on a recipe like this.

Sirloin is easy to prepare, tender, and just doesn't need a lot of help to taste amazing. Chuck or round steaks need to be slow cooked and prepared properly for the best tasting beef. I'm not saying they aren't good, in fact I love round steak and chuck. They are just those cuts you may be nervous about using when ordering beef in bulk, so here is a great recipe to try out!

The key to loving a freezer full of beef is learning how to incorporate various cuts into many different recipes. One steer will yield a lot of burger and top quality steaks that are easy to prepare and incorporate into a lot of recipes. One steer will also produce many roast and steaks from the round and chuck portions that do take a little practice to prepare, but I promise it really isn't all that hard.

Preparing chuck steak

This round of beef stroganoff I decided to use chuck steak. The key to having a freezer full of beef is to always try new cuts and new recipes. This recipe is perfect for that chuck steak that maybe you just aren't so sure about.

To start you'll need to thaw two chuck steaks by placing them in your refrigerator on a glass plate. To be honest though, I forget to get mine thawing and everything still worked out. I grabbed them out of the freezer and put them in the microwave on defrost for about five minute and flipping them half way through. This way they became thawed just enough to be cut into small cubes. You could also cut the chuck steak into strips if you prefer.

Once the chuck steak is thawed and cut into one inch cubes, it is time to season them. Season with salt, pepper, and your favorite steak seasoning. Any type of extra seasoning you have will go good on the chuck steak. After seasoning, coat the cubes in flour. I just used a couple tablespoons on a plate and rolled the meat in it before placing it in the skillet to sear.

Searing is just a quick process to get the meat browed, as a result this method will preserve the juices for the most tender flavor. Coconut oil or olive oil works best in a large skillet for searing. It will only take about two or three minutes on each side. The trick is to not flip the meat until it is browned and this way it won't stick onto your skillet. Once the meat is seared it is time to make the gravy.

How to make mushroom gravy

Set the seared meat aside and in the same skillet add two tablespoons of butter and chopped onion. After the onion becomes soft add in the mushrooms and garlic. I used an 8 oz package of mushrooms and one clove of garlic. Add in two tablespoons of flour and mix well in order to get the gravy to thicken. Add in Worcestershire sauce, dijon mustard, thyme, and beef broth into the gravy for added flavor. Bring the gravy to a boil and then simmer for a couple minutes stirring often so that it will continue to thicken. Once my gravy had a thick consistency I added in the sour cream. The gravy was so flavorful and had the perfect creamy texture.

I'm not even sure that you need to serve a side with beef stroganoff because it is so filling just as it is. I decided to serve oven roasted asparagus along with the stroganoff so that I could cover all bases with this meal. This way you have your meat, pasta, and greens.

Roasting the asparagus is one of the easiest ways to prepare them and they taste amazing. I use as much of the asparagus as possible because I hate to waste the perfectly good stems. The trick is to bend them about an inch from the bottom of the stalk and the woody part will snap off with ease, leaving you with the perfectly tender asparagus.

Then you will need to rinse the asparagus and place a single layer in a baking dish. Coat the asparagus with olive oil, salt and pepper. They will only take about ten minutes to cook. Sometimes if I really feel like dressing them up, I will sprinkle parmesan cheese over them before roasting.

2 pounds of chuck steak

4 tablespoons flour

2 tablespoons coconut oil

2 tablespoon butter

1 large onion

8 oz package of mushrooms

1 clove garlic

1 tablespoon Worcestershire sauce

1 tablespoon dijon mustard

1 teaspoon thyme seasoning

2 cups of beef broth

1 cup sour cream

1/2 pound of noodles

Salt and Pepper

  1. Cut and season the round steak. Cut into small bite sized chunks. Season with salt, pepper, and your favorite steak seasoning.
  2. Use 2 tablespoons of flour to lightly coat the chuck steak pieces.
  3. Heat oil in frying pan and sear the round steak. Cook on one side for 3-4 minutes and then flip steak and cook an additional 3-4 minutes.
  4. Set meat aside and using the same skillet, add butter and chopped onion.
  5. Add mushrooms, garlic, and two tablespoons flour. Mix well
  6. Add in Worcestershire sauce, dijon mustard, thyme seasoning, and beef broth.
  7. Continue to mix the gravy well and stir in the sour cream.
  8. Boil water and cook noodles.
  9. Season with salt and pepper to taste. Enjoy!
